Every single time I make a slow cooker recipe I think to myself, “why don’t I slow cook more often?” Its seriously the best. This chicken was perfect for my busy week, spicy enough for the Hubs, and includes my FAVORITE food, and this month’s seasonal ingredient, pineapple! Its a win, win, WIN over here in our household.
Recently Wholly Guacamole sent me a giant case of their products to test drive. I loooooove guacamole, and The Hubs LOVES salsa so we were pretty stoked on this delivery. I’ve been tinkering around with recipes, and decided that salsa and pineapple were a match made in heaven, and had to figure out a way to write them in a recipe together. The slow cooker made this possible, and I could not be happier with the way it turned out. Easy and healthy is my favorite combination!
Slow Cooker Spicy Pineapple Chicken
4 boneless, skinless chicken breast
2 c. diced pineapple
3 T. soy sauce
one 15 oz. container of fresh salsa **we used Wholly Classic Mild Salsa
1 c. uncooked quinoa
your favorite prepared or homemade guacamole **we used Wholly Spicy Guacamole
Place chicken breasts, pineapple, soy sauce, and salsa into a slow cooker. Cook on low heat for 8-10 hours or until chicken is tender. Remove chicken from slow cooker and shred. Return meat to slow cooker and add quinoa. Continue to cook on low for 15 minutes or until quinoa is fluffy. Serve with guacamole.

I made this yesterday and I can certainly vouch for it’s taste. It is SUPER yummy and insanely easy. I bet it would be good in a taco shell as well, but I just ate it on a plate topped with guac. Yum!
